Our Story

Louisiana Test Kitchen presents our pop up restaurant serving Cajun and Creole cuisine for two days only in the heart of New York City’s Greenwich Village. We’ve teamed up with Camaje Bistro, a long-time staple of French-American dining, to share an authentic taste of the Deep South.

Louisiana Test Kitchen is the vision of several Cajuns who have left Louisiana but still hold strong ties to our roots, our culture and our cuisine. Comprised of professional chefs, and artisans living around the United States, including here in New York City, Louisiana Test Kitchen is our passion and our platform for bringing the best of our culture, our sensibility and our cuisine to others.

Our passion for Cajun and Creole cuisine was developed in our early years growing up in southern Louisiana. Good food made from fresh local ingredients, prepared using long-established traditions, played a central role in our lives. Through the years we’ve continued to prepare and serve both traditional recipes as well as modern interpretations of our cuisine. We love sharing our culture, our passion and our food with others.

Through our partnership and collaboration with our friends at Camaje Bistro, we are proud to bring you the best in one of America’s most unique, traditional and local cuisines. Come join us!!

For those with pure food indulgence in mind, come delight your palate with our authentic recipes from the heart of Cajun country. We have created a menu that highlights the culture, the history and ingredients of the Acadiana region. Well-known dishes such as gumbo and jambalaya will surprise and please you, and we are excited to broaden your knowledge of Cajun and Creole cooking with lesser know creations and playful interpretations on popular dishes, such as crawfish beignet.
